3 Breakfast Recipes under 300 Calories.

Sometimes I am dumbfounded what to make FAST in the am.  Now that the school has started and maybe some of you have started a new job or just coming back from vacation, it’s just so hectic.  And I hate eating those breakfast bars that are really just cake or very close to candy! Or donuts …you just might get that sugar glaze look on your morning drive!

So here are some simple recipes that are under 300 calories.

Breakfast Cups

#1: The Breakfast Cup {190 calories per serving}

What you need:

  • Cooking Spray
  • 7 eggs
  • 1 cup grated cheese of your choice
  • Mortadella (canned Halal meat) or any Halal sandwich meat
  • pastry puff or uncooked biscuit dough (18 pieces) –> for those who want to cut down on carbs then omit this. *just make sure you spray the pan or even use a cupcake liner for easy removal after baking.
  • 1/2 cup of milk
  • salt, pepper to taste, sprinkle paprika on top.
  • Chili or Siracha to give it a kick!

What to do:

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 18 muffin cups with cooking spray.
  2. Roll out biscuit dough or pastry puff on a lightly floured surface to form 5-inch rounds. Place each round in the prepared muffin cups, pressing into the base and sides to form a dough cup.
  3. Add the mortadella or halal sandwich meat onto pastry puff of biscuit dough.
  4. Whisk eggs, milk, salt, and pepper together in a bowl until well-beaten. Pour egg mixture into each dough cup, filling each just below the top of the biscuit dough. Sprinkle Cheddar cheese on top of egg mixture.
  5. Bake in the preheated oven until eggs are set and biscuit dough is golden, 15 to 18 minutes.

 

#2.  The Breakfast Burrito (252 calories per serving)

What you need:

  • Flour tortillas

  • 7 eggs
  • 1/2 cup Grated cheddar cheese
  • Salsa – if you want to add a kick to your burrito
  • Aluminium Foil – for wrapping.

What to do:

  • Mix all 7 eggs and pour onto pan to make scrambled eggs
  • Layout all the above ingredients like a station: Tortilla, scrambled eggs, cheese, salsa and foil.
  • Assemble your burrito starting with the Tortilla first, spoon in scrambled eggs, add some cheese and salsa – Roll Up with the foil – this makes it easy to take the burrito on the go.

 

#3. The Banana Nut Breakfast Cookie {290 calories per serving}

What you need:

  • 1 cup uncooked oats – food processed until it looks like a coarse powder
  • 1/2 cup whole oats (not processed in food processor)
  • 1 egg, beaten
  • 3/4 cup low fat milk
  • 1 Mashed banana
  • 2 table spoon ground flaxseed
  • 2 table spoon chopped walnuts
  • 1 teaspoon cinnamon
  • 1 teaspoon honey
  • 1/8 teaspoon salt

What to do:

  • Preheat the oven to 350 degrees.
  • Pulse 1 cup oats in a food processor until they resemble a coarse powder.
  • In a medium bowl, combine ground oats with 1/2 cup whole oats, 1 beaten egg, 3/4 cup low-fat milk, 1 mashed banana, 2 tablespoons ground flaxseed, 2 tablespoons chopped walnuts, 1 teaspoon cinnamon, 1 teaspoon honey, and 1/8 teaspoon salt.
  • Scoop batter onto a baking sheet coated with nonstick cooking spray;
  • bake 12 to 14 minutes. (Makes four 2-cookie servings.)
