Halal Food Series: Stuffed Vegetables

During this cold season my children like to eat stuffed vegetables for their lunch. So my dear Muslimah, I want to share this recipe to you. Maybe you and your family like it too. It is easy, delicious and healthy.

Ingredients:

  • 6 medium zucchini
  • Cabbage leaves
  • 4 potatoes

Filling/stuff:

  • 1/2 cup of rice
  • 3 tb spoon full of ground meat
  • 1 medium onion chopped
  • 1 tomato chopped
  • 2 cloves garlic minced
  • a few of coriander leaves cut into small pieces
  • salt, pepper  and cumin to taste

Sauce:

Blend

  • 2 big tomatoes
  • 2 tb spoons tomatoes pasta
  • Pepper, salt and 1 chicken block (optional)
  • 2 glasses of water

Wash all vegetables and using a teaspoon or tool for it, scoop flesh from zucchini and potatoes, make a deep hole.

Mix all the ingredient of stuff, put the filling inside the zucchini and potatoes, then put inside the Pot.

Cut the cabbage leaves then put the filling and fold, arrange them over the potatoes and zucchini. Pour over vegetables with the blend of sauce. Cook it for half an hour or till done in medium heat.

Serve them hot. You can eat with chilli sauce. (Blend chilli, tomato and pinch of salt).
