The name “schotel” is derived from the Dutch meaning dish. By history, many
Indonesian words are much influenced by Dutch language. So, there are many casserole dishes in Indonesia is named schotel.
This very simple dish which was modified by my mom is a family favorite. It is also edible for vegetarians.
Ingredients (for a medium sized baking dish)
3 large potatoes, peeled, sliced crosswise
300 g broccoli, cut into small tree form
3 eggs
150 grams of grated cheese (any cheese will do, but I prefer Gouda and Mozzarella)
100 g butter or margarine
200 ml of fresh liquid
1 medium sized onion, thinly sliced
sugar salt pepper to taste
50-100 grams of grated mozzarella cheese (for topping)
2-3 sm bread crumbs
1/2 block chicken stock
How to make:
1. Steam potato and broccoli pieces until slightly tender, set aside
2. Lightly grease the baking dish and heat the oven to 180 degrees Celsius
3. Mix and stir in a large bowl: the eggs, grated cheese, butter, chicken stock
4. Arrange the steamed potato pieces in the baking dish
5. Pour egg mixture into the pan, then arrange the steamed broccoli into the batter until almost submerged
6. Sprinkle with bread crumbs and grated mozzarella cheese.
7. Bake for around 45 minutes in the preheated oven, or until its golden brown.
Cool outside the oven and ready to serve. Enjoy!:)
Note:
* If you want you can add other ingredients, like mushrooms, or sliced smoked beef
* Onion would taste better if sauteed in butter first
