Classic Potato Salad Recipe

Here is an easy recipe for a summer classic that compliments just about any main course. It’s also a cool, delicious treat for breaking fast during Ramadan in hot weather climates. The following recipe can serve 10-12 people.

Ingredients:

5 lbs of Potatoes

4-5 cups of Mayonnaise

2 tbsp of Mustard

½ cup of Relish

8 Eggs

Salt

Pepper

Paprika

Onions

Directions:

1. Wash and peel potatoes and then cut them into bite size cubes.

2. Boil the potatoes and eggs for 10 to 15 minutes or until desired softness of the potatoes is reached.

3. Drain the potatoes and the eggs. Remove the eggs for peeling. Place potatoes in a large bowl to cool.

4. Peel and chop the boiled eggs into bite sized pieces and add to the large bowl of potatoes.

5. Peel and chop the onion into small pieces and add to the potatoes and eggs.

6. Add relish, mayonnaise, mustard; add salt, pepper, and paprika to according to taste.

7. Mix the ingredients thoroughly and allow the mixture to cool in the refrigerator for 1 to 2 hours. Best when served cold.
