So, I hope everyone has come back from having a great Idul Adha Celebrations.  I know I did.  Allhamdullilah! Great food, great company! Unfortunately, as the weather in the Northern hemisphere, specifically on the East Coast of the America’s the weather AND the time changed. So feeling a little unsettled. In junction with this change many of us have come down with the flu! May Allah keep you well!

So, today I wanted to give you all a change of scenery and share with you something warm and delicious. Not to mention super and I MEAN super easy to make.  Homemade chicken dumplings or as they say it in the Asia Pacific world – Bakso. (=pronounced: Baahk’so). Traditionally this dumpling is made with ground beef but as I was lazy this morning to go and get some beef, and chicken breast was readily available – so, I used that instead.  And to justify my laziness even more, chicken feels so much homier and healthier than beef. Yes?

So here is what you need:

  • 1 1/2 cup Tapioca flour (typically found at your local Asia Market Store)
  • 1 large chicken breast (in America the chicken size seems to be the same size as a Turkey…)
  • 1 small onion
  • 1 tspn salt
  • 1 tspn pepper
  • 1/2 tspn ginger (I used ground ginger, if you use fresh ginger grate it)
  • a pot (4qt) pot of broth (I used Halal bullion and left over Indomie seasoning packages..we are all sick now it’s okay to cheat…)
  • Spring Onions (use as much as you like!)
  • Food Processor. I honestly don’t know how to make it without the food processor if you know please share!
  • Deep soup pot

Now let’s make it!

1st

  • In food processor put: Onions – process till onions are finely chopped
  • Then cut up chicken breast (no bones please!) and add to the processed onions (YES straight into the food processor)
  • Add salt, pepper, ginger
  • Process in food processor till chopped fine.  This will result in a mushy paste.

2nd

  • Remove mixture and put in large bowl.
  • Add tapioca and mix till all incorporated.

3rd

  • Heat up pot with water and the bullion and Indomie seasoning packages.  Wait till water boils.  Keep broth boiling.

4th

  • Oil up your hands and roll the “sticky” mixture into balls and drop them directly INTO the boiling broth.  Do this until all of the mixture have been rolled and dropped into the hot boiling broth.  To know if the dumplings are done they will RISE to the top of the pot.  (HENCE important to have deep pot)

5th

  • Add the chopped spring onions and salt and pepper to taste into the boiling soup.  Then simmer and EAT!
